Coconut Rice

1 cup brown rice

1 cup coconut milk

1½-2 cups water

20cms piece fresh ginger, peeled

1 large clove garlic, peeled

Salt and pepper

Crispy shallots to garnish

Finely chopped coriander to garnish

 

Place the rice in a pot and add the coconut milk and water. Add the piece of ginger and garlic. Season. Bring to the boil and reduce to a simmer until the rice is cooked (about 25-30 minutes).

 

When ready to serve garnish with a handful of crispy shallots and chopped coriander.
