Make the most of the fresh figs available. There are so many ways to enjoy them as sweets or savoury. If fresh are not available you can use dried figs for this recipe.
- 300 gm Fresh Figs
- 150gm Pitted Kalamata Olives
- 100gms Red Wine Vinegar
- 100gm Brown Sugar
- 100 mls Water
Cut figs into quarters.
Add to water with other ingredients.
Simmer gently for 20 mins
Remove from the heat, cool for 5 minutes then pulse in blender
Until smooth texture.
Chill and serve with your favourite cheese.
Will keep in fridge for 2 months covered.
Dried figs can be used instead of fresh figs just need to soak before use.
