Pear, Walnut and Roquefort Salad

In the heat at this time of year I’m always trying to think of delicious meals that involve little or no cooking.  We all love the following Parisian bistro classic – ‘Pear, Roquefort and Walnut Salad.’ It’s great for lunch, a dinner entree or make a bigger portion for a whole dinner.
The Roquefort cheese, Uncle Joe’s Walnuts and walnut oil come from the La Cigale Grocery and Deli and the pears, lemons and rocket from Market stallholders.

  • Ingredients:
  • Rocket
  • Roquefort cheese – approx 30 per person
  • Uncle Joe’s fresh walnuts – toasted and broken into pieces
  • Dressing – whisk together:
  • Uncle Joe’s walnut oil
  • Lemon juice 3 parts oil to 1 part juice
  • Dijon mustard
  • Salt and pepper

Method

1 Pear per person – Jason has amazing new season’s baby ‘sugar’pears – peeled, cored and quartered. Slice each quarter into 3 or 4 pieces.

On individual plates put rocket, next top with slices of pear, then crumbled Roquefort and walnut pieces.

Drizzle over the dressing. Serve with plenty of French bread
