Pumpkin, Spinach & Rice Tian

A Tian is a French oven dish used for both cooking  and serving. It is also the name of the dish prepared in it.  I’ve mentioned Spinach here but its ok to use any other leafy green vegetable such as kale. I actually used cavolo nero leaves stripped from their stalks. Around 2 large bunches.

 

Ingredients

1.5kg Pumpkin, skin off, deseeded and cut into small cubes

1 Onion, peeled and finely chopped

1-1 1/2 Cups of baby spinach leaves or similar

1 Cup of rice, I used wholegrain but any sort is fine

Salt & pepper

Grated gruyere cheese or any hard flavoured cheese

 

Heat a little oil in a large frying pan and add the pumpkin pieces. Also pour in about 1/4 cup of water. Cover the pan and leave the pumpkin to slowly cook. Check and stir occasionally, this will take around 30 minutes.  After about 20 minutes add the onion and mix. Once all cooked, turn off the heat and stir in the spinach which will wilt.

Cook the rice in a pot of boiling water or according to the instructions on the packet.

Mash the pumpkin and vegetables with an electric hand blender or hand masher. Stir in the rice, making sure it is mixed thoroughly. Spoon into an oven dish and top with grated cheese.

Place in a medium hot oven for about 15 minutes or until the cheese has melted and is crispy.

Leave to cool out of the oven for about 5 minutes then serve.

This is versatile dish, its great with any chicken, meat or fish dish, or as is with an egg. Its also possible to add other complimentary vegetables.
