Cook some peas and/or edamame beans. Drain, add a few leaves of finely chopped mint and mash or blend. Mash an avocado with the juice of a lemon. Season. Spread a layer of mashed peas on grilled bread and next add the avocado. Top with smoked prawns and/or scallops. At other times I use poached prawns. Decorate with a few snow peas and microgreens and squeeze over some lemon juice.
