 LA CIGALE FRENCH MARKET NEWS

 If you watched Peta Mathias's show 'Unplugged in Morocco' 2-3 weeks ago, you will have been intrigued as I was to see that sardines are an important part of Moroccan cuisine. Consequently I trolled through a few of my Moroccan cook books and found several recipes using sardines.
We've been lucky at our Market to have a supply of fresh sardines from Jimmy of JASSID so I thought I'd try a Moroccan favourite – Sardines stuffed with Chermoula. For the quick and easy way, buy a jar of chermoula from La Cigale - another great product by Greg Malouf. Chermoula is widely use as a marinade and a sauce. There are a variety of recipes for it. Greg's includes cumin seeds, sweet paprika, coriander, ginger, garlic, lemon juice, chilli and olive oil. for this recipe I mix this with some extra lemon juice, chopped parsley and/or coriander and crushed garlic.
Get Jimmy to clean and butterfly the sardines or it's easy to do it yourself. Trimming off the tails is optional. If necessary trim around the edges.  The idea is to have the sardines ending up looking like sandwiches where the sardines take the place of the slices of bread and the filling is the chermoula. Therefore sort out the butterflied sardines into pairs that are similar sizes.
Open the jar of chermoula. Give it a good mix as the oil will be on the top. In a bowl mix 1 part chermoula, (eg 1 tbsp) with 2 parts of the chopped herbs, the juice of 1 lemon and a clove of crushed garlic. Lay one sardine flat on a board or plate - skin side down.  Spread with an even layer of chermoula. Top with another sardine - skin side up. Press together firmly.
Heat some oil in your frying pan. Gently coat each sardine sandwich with flour. Gently put in the hot oil. Fry each side for 1 to 2 mins – depending on how thick the sardines are. Drain on paper towels. Serve warm or at room temperature with lemon wedges.

She sells a great range of top quality Italian balsamic vinegars from young balsamics, 5 years aged, 10 years aged  (2nd best in the world) and some aged 25years. As well there are balsamic creams which are thick and delicious. These reductions can be used as the base for a sauce, as dips, drizzled over meat or grilled veges or with cheeses and biscuits.

Many of our La Cigale customers had made the Saturday French Style Farmers Market an important part of their Saturday morning routine. So you can imagine their delight when the Sunday market started! There is nothing more enjoyable on a Saturday or Sunday morning than to purchase freshly baked aromatic bread, a serving of Paella (which doesn’t always make it all the way home!), a selection a delicious French cheeses from the La Cigale Fromagerie and a number of other fabulous products and produce which make their way into your market bag.

It’s so lovely to be able to come to the market and talk to the producers and to know that the produce you have brought is fresh and absolutely delicious. Nothing beats the freshest fruit and vegetables, home butchery and face to face contact with the producers.

If you haven’t been to our market, you’re in for a real treat when you come and visit. Enjoy a steaming hot coffee from the La Cigale Café and then make your way through to the Market and wander your way around the bustling stalls gathering yummy products for a feast when you return home.

 Every week La Cigale hosts a French style Farmers Markets at our Parnell store which has recently expanded, the market is now held in the rear of the warehouse and the carpark our warehouse.

 The emphasis is on seasonal fruit and vegetables (organic or spray free whenever possible), artisinale bread, cheese, confectioneries, oils, spices and homemade preserves and confiseries. You can buy all the supplies you want for a delicious lunch or dinner - freshly made Paella, hot rotisserie chickens, smoked sausages, salmon and lots more!

The market runs from 8am to around 1pm every Saturday

and from 9am to 2pm every Sunday

         

La Cigale Cafe Our fully licensed cafe is open from 8am Saturday or 9am Sunday so customers can fortify themselves with a hearty breakfast before the market or restore themselves with lunch afterwards!
La Cigale also has a coffee bar situated behind the Fromagerie in the Warehouse.
