Were any of you brave enough to try last week's BBQ leg of goat? This week is another easy BBQ recipe and it's not at all scary like the goat. Pancetta wrapped chicken thighs Chicken thighs preferably with the bone in - I allow 2 per person Marinate these in a mixture of olive oil, lemon juice, fresh thyme, crushed garlic, salt and pepper for 1-2 hours. Lift them from the marinade. On top of each thigh place a sprig of fresh thyme. Wrap the whole thing in 1 or 2 strips of peppered pancetta. I particularly like the flavour from this pancetta (we sell this in our deli fridge). I served these with a simple rocket salad and Urenika - purple Maori potatoes - boil till cooked and then add a generous knob of butter and chopped spring onion and fresh herbs such as parsley, mint and basil.
