Ingredients
1 large packet of bluebird salt & vinegar chips (150g)
1 1/2 cups of tasty cheese, grated
1/2 cup Parmesan cheese, grated
1 cup flour
1/4 tsp cayenne
110g butter, softened
2-3 tbspns chopped fresh chives, thyme leaves or rosemary
Crush the potato chips using a food processor. Place the crushed chips into a large bowl. Add and mix in all the ingredients, excluding the butter. Using your hands mix in the soften butter until the mix comes together.
Make into small balls (approx. 1 tsp per ball, or you can make whatever size you like). Place the balls onto a non-stick tray and flatten with a fork. Bake at 150c for about 25mins or until golden.
These are great as a snack/nibble any time of the day or night.
