Collard greens & Agria potatoes

We love this mix of potatoes and greens!

Ingredients & Method

–  Agria potatoes, scrubbed or peeled and cut into cubes
– 1-2 bunches of collard greens – strip the leaves from the stalks, roll up the greens and slice
– Boil the potatoes in water to which you’ve added a splash of olive oil. When these are now ready pour off most of the water and then add the slices greens.
–  Add more olive oil and the juice of a lemon. Cook it all for another 2-3 minutes or until the potatoes are done.
– Drain it and serve with a dash more lemon juice and olive oil if you feel like it!
