Grated Salad

Although we’re in the middle of winter this salad works as a vegetable on the side with fish, chicken or meat and any leftovers are great for lunch the next day!IngredientsIn a large bowl mix all the following
– 1 Kohlrabi, peeled and grated
– 1 large purple carrot, peeled and grated
– 1 large yellow carrot, peeled and grated
– 5-6 baby carrots, washed, tops & bottoms trimmed, halved
– 2-3 radishes, finely sliced
– 1-2 spring onions, chopped
– Fresh herbs – (parsley, coriander or others) finely choppedMethodToss all of these together with
– 2 tbsps of extra virgin olive oil
– 1 tbsp of apple cider vinegar (or lemon juice)
– 1 tbsp of tahini (if you have it, not essential)
– Salt & pepper
– 1 tbsp of hemp seeds from Plant Culture (I forgot but should have sprinkled on top)
