Grilled Figs, Bean & Goats Cheese Salad

Ingredients 

Green beans, blanched, refreshed and dried on paper towels

Figs, cut in half Handful of walnut pieces, roasted

Soft goats cheese or feta

1 orange, peeled, pith removed and cut into small segments

 

Dressing   

50-60ml olive oil

1½ tbsps pomegranate dressing or pomegranate molasses

1 tsp sherry vinegar

Juice and zest of ½ orange

Salt and pepper

Heat your oven grill. Place the figs, cut side up on a baking dish and sprinkle with a little sugar to help the figs caramelise. Cook till just soft.

Mix the dressing ingredients together. Assemble the salad starting with the beans, next add the orange segments, the figs, sprinkle over the walnut pieces and cheese.

Drizzle with the dressing.
