As always on holiday we try and cook on the barbecue as much as possible. The rain and wind have made that challenging some days but umbrellas have helped!! For a very quick and easy lunch or dinner, or even as a snack with drinks, try lamb ribs. They’re a crowd pleaser and much easier to eat in your fingers than other sorts of ribs which are normally much bigger. Emma came up with the following simple marinade. Quantities here are approximate.
Ingredients
Lamb ribs (allow 3-4 per person)
Juice and rind of 2 oranges
2-3 cloves of garlic, crushed
Good dash of soy sauce
1 tbsp runny honey
1-2 tbsps berbere spice blend (available in most supermarkets)
Freshly ground black pepper
50-100ml olive oil
Mix together all the marinade ingredients and add the lamb ribs. Marinate overnight or for at least an hour or two. Turn them over once or twice.
Heat the BBQ till hot and grill for 2-3 minutes on each side or until they’re cooked to your liking.
Serve as they are or with a simple salad or two.
