In the heat at this time of year I’m always trying to think of delicious meals that involve little or no cooking. We all love the following Parisian bistro classic – ‘Pear, Roquefort and Walnut Salad.’ It’s great for lunch, a dinner entree or make a bigger portion for a whole dinner. The Roquefort cheese, Uncle Joe’s Walnuts and walnut oil come from the La Cigale Grocery and Deli and the pears, lemons and rocket from Market stallholders.
- Ingredients:
- Rocket
- Roquefort cheese – approx 30 per person
- Uncle Joe’s fresh walnuts – toasted and broken into pieces
- Dressing – whisk together:
- Uncle Joe’s walnut oil
- Lemon juice 3 parts oil to 1 part juice
- Dijon mustard
- Salt and pepper
Method
1 Pear per person – Jason has amazing new season’s baby ‘sugar’pears – peeled, cored and quartered. Slice each quarter into 3 or 4 pieces.
On individual plates put rocket, next top with slices of pear, then crumbled Roquefort and walnut pieces.
Drizzle over the dressing. Serve with plenty of French bread
